Valentine's Cookie S'mores

After I made these super cute heart-shaped marshmallows, I had to come up with a fun way to use them because I don't actually like plain marshmallows all that much. I do LOVE s'mores though! For this recipe, you can make the marshmallows up to a week ahead of time and the cookies up to two days ahead of time. You can either surprise your loved one with these delicious s'mores, make them as a fun project with your loved one (or your galentine), or hell, just make them and eat them all by yourself because you deserve it!

Ingredients:

  • Homemade marshmallows (8)

  • Freshly baked cookies (homemade or store bought) (8)

  • 90g (½ cup) chocolate chips

  • ½ tsp coconut oil

Directions:

  1. Use a heart-shaped cookie cutter to cut homemade marshmallows out into heart-shapes. Coat the sticky sides with powdered sugar to keep marshmallows from sticking to each other. Set marshmallows aside.

    1. If made ahead of time, you can store homemade marshmallows in an airtight container for up to 2 weeks.

  2. Roll your cookie dough into about 80g portions (a heaping 3 tbsp cookie scoop). Place on a cookie sheet, spread out about 4 inches from each other. Depending on the cookie recipe you have, they’ll bake for slightly different times, but since they’re so big, they’ll need to bake for around 14-18 minutes. At the 10 minute mark carefully lift one edge of the cookie sheet about 2 inches and drop it, repeat a second time. This will help spread the cookies slightly.

  3. Cool the cookies on the baking sheet for 15 minutes, then use the heart-shaped cookie cutter to cut the same heart-shape out of the cookie. Allow to cool completely cool.

  4. Once cookies are cooled, place the chocolate and coconut oil in a microwave safe bowl and melt in 30 second intervals until completely melted.

  5. Use the back of a spoon to spread a fairly thin layer of chocolate over the bottom side of heart-shaped chocolate chip cookies. Sandwich a heart-shaped marshmallow in between each cookie and allow the chocolate to set (about 1 hour at room temperature).

  6. If you have a kitchen blow-torch, you can torch the edges of the marshmallow right before eating!
