Super Banana-y Banana Bread

I feel like every baker has their own version of a banana bread and this is mine! It’s slightly on the healthier side, but like, not enough to call it a “healthy” banana bread, plus its really quite easy to make! One of my favorite things about this recipe is the technique of adding one of the mashed bananas at the very end, so you get actual banana chunks while eating it. As you can imagine, that is where I got inspiration for the ridiculous & cheesy name for this recipe :)
Ingredients:
4 very ripe bananas
113g (8 tbsp / ½ cup) unsalted butter, melted
100g (½ cup) granulated sugar
2 large eggs
½ tsp vanilla extract
80g (¾ cup) all purpose flour
80g (¾ cup) whole wheat flour
1 tsp baking soda
½ tsp salt
90g (½ cup) mini chocolate chips
Directions:
Preheat your oven to 350°F. Line a 9x5x3 loaf pan with parchment paper.
In a large bowl, whisk the butter & sugar together.
Mash bananas with a fork until they are the consistency of applesauce. Add about ¾ of the banana mixture into the butter and sugar mixture, along with the eggs and vanilla. Set the remaining mashed banana to the side.
Mix with a whisk until everything is well incorporated.
Fold both flours, baking soda, and salt into the batter until mostly incorporated.
Add chocolate chips and remaining mashed banana. Fold into the batter until everything is evenly distributed.
Transfer your batter to the prepared loaf pan and bake for 50-60 minutes, or until the bread no longer jiggles when the pan is gently shaken.
Allow to cool in the pan for around 30 minutes before transferring to a cooling rack.
