Summer Berry Clafoutis Bars

Clafoutis is a wonderfully easy-to-make treat that originated in Southern France. It is traditionally baked in a skillet, but I don’t own a skillet and I imagine I’m not alone in that, so I wanted to make a version of this treat for us non-skillet owners. I made this one with berries, but you can make a clafoutis with so many other types of fruit! You can use sliced apples, pears, peaches, plums, really whatever you have lying around your kitchen will probably make a delicious clafoutis!

Ingredients:
1 cup milk
3 large eggs
150g (¾ cup) granulated sugar
¼ tsp salt
2 tsp vanilla bean paste (or vanilla extract)
3 tbsp unsalted butter, melted & slightly cooled
120g (1 cup) all purpose flour
240g - 360g (2-3 cups) assorted berries, fresh or frozen (you can use cherries, blackberries, blueberries, raspberries, and/or sliced strawberries)
Directions:
Place the butter in a microwave-safe dish and microwave until melted (around 30 seconds). Set aside to cool slightly.
Preheat the oven to 325°F. Line a 9x9 baking dish with parchment paper, set aside.
In a large bowl, vigorously whisk together eggs, milk, sugar, salt, vanilla, and butter until everything is well-combined.
Add the flour and whisk until the flour is mostly incorporated, but still some flour visible.
Pour in the fruit and mix in with a spatula until just evenly distributed. The flour will continue to incorporate as you mix in the fruit.
Pour your mixture into the prepared baking dish, then bake for 45-60 minutes, until the clafoutis does not jiggle when the pan is gently shaken.
Remove from the oven, you can serve immediately while still hot or allow the clafoutis to come to room temperature, then cut and store in an airtight container in the refrigerator for up to 5 days.
