Stovetop Fudge Icing
Active time: 10 minutes | Yield: Enough for a 9x13 sheet cake
I’m always looking for alternatives to topping a cake with traditional icing because sometimes I’m not patient enough to wait for my butter to soften or I just don’t feel like breaking out the electric mixer. In this case, I’m currently living without an electric mixer so it was the perfect time to experiment! This recipe is so easy and quick, especially because there is no need to wait for the butter to soften, PLUS you don’t even have to wait for the cake to cool before icing it! Game changer!
Ingredients:
113g (½ cup / 1 stick) unsalted butter
50g (½ cup) cocoa powder
⅓ cup (80g) buttermilk
300g (2 ½ cups) powdered sugar
1 tsp salt
Directions:
Place butter in a medium saucepan over medium heat.
Once the butter is melted, whisk in cocoa powder and buttermilk.
Once the mixture begins to simmer, remove from the heat and whisk in powdered sugar and salt.
Once ingredients are well incorporated, pour over your cake and spread out with a spatula. Your cake can still be warm when you ice it.
