Perfect Fudgy Brownies

To me, the perfect brownie is dense, fudgy, super chocolatey, and has a nice crinkley top. I, of course, had to create my own “Perfect Brownie” recipe because for one thing, I LOVE brownies and chocolate, and also I find it so satisfying and exciting to be able to create a recipe that you are super proud of! I am so delighted to share this recipe because I am so thrilled with how these brownies turned out.
Ingredients:
4 large eggs
200g (1 cup) granulated sugar
100g (½ cup) brown sugar
2 tsp vanilla
110g (½ cup) coconut oil.
225g (1 ¼ cup) dark chocolate chips or baking chocolate chopped finely
113g (8 tbsp / ½ cup) butter
25g (¼ cup) dutch cocoa powder (can be substituted with regular cocoa powder)
60g (½ cup) powdered sugar
160g (1 ⅓ cup) all purpose flour
½ tsp baking powder
¾ tsp salt
Directions:
Preheat your oven to 350°F. Line a 9x13 pan with parchment paper. Set aside.
In a large bowl, whisk together eggs, granulated sugar, brown sugar, vanilla, and coconut oil. Set aside.
Place butter and chocolate in a small pot over medium-low heat, stirring constantly (if you stop stirring, the chocolate can burn).
Once butter and chocolate are melted, whisk in cocoa powder & powdered sugar.
Pour chocolate mixture into the large bowl with the egg and sugar mixture and whisk until well combined.
Fold in flour, baking powder, and salt until just combined.
Pour brownie batter into your lined 9x13 pan.
Bake for 27-34 minutes, until a toothpick comes out clean, or with a few crumbs (if it has liquid batter on it, bake for another 1-2 minutes, then check again). The brownie will have a shiny, crinkley top, so they may look under-baked which is why it is important to check with the toothpick.
Allow the brownies to cool for 15-20 minutes before enjoying! When you first remove them from the oven, they may look slightly under-baked, but the brownies will set over the next 15-20 minutes and will become the perfect fudgy texture.
