Peanut butter Cake Filling

Active time: 10 minutes | Yield: enough for 30 cupcakes (or 2 layers on a layer cake)


I'm a sucker for chocolate and peanut butter together, which inspired this super easy and delicious filling for cakes and cupcakes alike. You simply throw all of the ingredients in a bowl together and mix, then it's ready to use; it can't get any easier than that! My favorite way to use this is in the center of my favorite chocolate cupcakes...so yum!


Ingredients:

  • 8 tbsp butter, melted

  • 272g (2 cup + 4 tbsp) powdered sugar

  • 400g (2 heaping cups) Peanut Butter

  • 2 tsp vanilla extract

  • ¾ tsp salt

  • 1 tbsp milk


Directions:

  1. Combine all ingredients in a medium bowl and mix together with a spatula. Once ingredients are mostly incorporated, whisk vigorously to remove lumps. The mixture may still be lumpy, but that's okay. If you're looking for a completely smooth filling, I recommend using an electric mixer with a paddle attachment.

  2. Use in between cake layers or to fill the centers of cupcakes. Ensure the cakes are completely cooled before filling.
