Ooey Gooey Brownies

Active time: 20 minutes | Bake time: 45 minutes


As a chocolate lover, brownies are always a solid dessert choice. These ones are super ooey and gooey (obviously) and oh so chocolatey! The dutch cocoa powder makes them super dark, but if you don’t have dutch cocoa laying around, you can substitute it for regular cocoa powder. The brownies will be slightly sweeter and less dark in color, but still will be absolutely delectable! To put a little twist on them, I put marshmallow fluff right on top of the batter before baking and it totally took them to the next level.


Ingredients:

  • 226g (1 cup / 2 sticks) butter, to be melted

  • 60g (2.3 ounces / ⅓ cup) dark chocolate chips, or baking chocolate chopped finely

  • 250g (1 ¼ cup) brown sugar

  • 200g (1 cup) granulated sugar

  • 4 large eggs

  • 100g (1 ¼ cup) dutch cocoa powder (can be substituted with regular cocoa powder)

  • ½ tsp salt

  • 2 tsp vanilla extract

  • 90g all purpose flour


Directions:

  1. Preheat oven to 350°F. Line a 9x9 or 7x11 pan with parchment paper.

  2. Fill a large pot with about 2 inches of water and place on the stove on medium heat.

  3. Meanwhile, to a large heat-proof bowl, add butter (i recommend cutting the butter into 1 tbsp-sized pieces), chocolate, brown sugar, and granulated sugar.

    1. Make sure the bowl fits over the pot of water, but the bottom of the bowl must not touch the water.

  4. Whisk the butter mixture until it is completely melted and ingredients are all combined, remove from the heat and set aside to cool for 10 minutes. The mixture will be grainy.

  5. Add the eggs one at a time, mixing well in between each egg.

  6. Add cocoa powder, salt, and vanilla. Mix until well incorporated.

  7. With a spatula, fold in the flour gently until it is just incorporated, do not overmix.

  8. Transfer your batter to the prepared pan.

  9. Bake for 45-50 minutes
