I’ve honestly never heard of or seen a double chocolate blondie, but I love blondies and I love chocolate, so I decided to try making some! I basically took one of my dark chocolate cookie recipes and baked it into a baking dish. Unsurprisingly they were delicious because I’m obsessed with everything about cookies and also chocolate, can’t really go wrong with this combination!
Ingredients:
226g (1 cup / 16 tbsp / 2 sticks) unsalted butter, softened
100g (½ cup) granulated sugar
220g (2 cup + 2 tbsp) brown sugar
2 large eggs
50g (½ cup) dutch cocoa powder
200g (1 ¾ cup) all purpose flour
150g (1 cup) cake flour
1 tsp cornstarch
¾ tsp baking soda
1 tsp salt
270g (1 ½ cup) chocolate chips
Directions:
Preheat the oven to 350°F. Line a 9x13 baking dish with parchment paper, set aside.
With a spatula or an electric mixer with a paddle attachment, cream the butter until light and smooth. Add both sugars and cream until very well combined.
Add eggs, one at a time, mixing in between each until well combined.
Add cocoa powder, all purpose flour, cake flour, cornstarch, baking soda, and salt. Mix on low speed, scraping down your bowl halfway through.
Add chocolate chips and on low speed until evenly distributed.
Transfer the dough to your prepared 9x13 pan and spread out in an even layer (you may find it easiest to do this with the heel of your hands).
Bake for 23-28 minutes, until a toothpick comes out clean. Allow to cool in the pan for around 30-45 minutes before cutting and enjoying.
