I clearly have several brownie recipes already on my site, but i just love them all, so I keep experimenting and making more! In this recipe, adding the sugars (specifically the powdered sugar) to the hot melted oil is what creates the perfect crinkle crust on top of the baked brownies. The brownies have a nice deep chocolate flavor and are perfectly fudgy, so delicious!
Ingredients:
226g (1 cup/2 sticks) butter, melted
2 tbsp coconut oil (or canola/vegetable oil), melted
160g (1 ⅓ cup) powdered sugar
200g (1 cup) granulated sugar
2 tsp vanilla extract
3 eggs, room temperature
120g (1 cup) all purpose flour
1 tsp salt
100g (1 cup) cocoa powder
180g (1 cup) chocolate chips, optional
Directions:
Preheat oven to 350°F. Line a 9x13 pan with parchment paper.
Melt the butter and coconut oil in a large, microwave-safe bowl.
While the butter is still hot, add both sugars. Whisk until evenly incorporated. Leave to cool for 10 minutes.
Add flour, cocoa, and salt. Gently fold in the dry ingredients with a spatula until mostly combined (still some flour streaks visible).
Add chocolate chips; fold into batter. As you fold in the chocolate chips, the dry ingredients will continue to incorporate. Do not overmix.
Pour your batter into the prepared 9x13 pan and spread out evenly with a spatula.
Bake for 22-29 minutes, until a toothpick comes out mostly clean (may have some small crumbs on it - what you don’t want is wet batter).
Let cool in pan for 20-30 minutes before slicing and enjoying!
