Canadian Butter Tarts

I'm always excited when I discover a type of dessert that I've never heard of because sometimes I just want to branch out and try new things! I especially love it when it's from a different country because as a travel-lover, its like taking a journey without leaving your kitchen. In this case, I could have made pre-made pie dough but I always find it to be a bit of a pain and using store-bought ended up making this dessert so much quicker and easier to make, especially if you don't have a lot of baking experience!
Ingredients:
1 package premade pie dough (should come with two crusts)
113g (½ cup / 8 tbsp / 1 stick) unsalted butter
200g (1 cup) brown sugar
2 tbsp heavy whipping cream
2 tsp vanilla bean paste (or vanilla extract)
1 large egg
90g (½ cup) chocolate chips
Directions:
Use a 3-inch circle cookie cutter or the top of a cup to cut out as many circles as you can of the pie dough (I was able to cut out 24).
Place each circle of dough over mini muffin tins, then refrigerate while you do the next steps.
Preheat the oven to 375°F.
Place sugar and butter in a medium saucepan over medium heat. Mix frequently until butter has melted.
Remove from heat, mix in cream and vanilla, then let sit for 5-10 minutes to cool slightly.
Mix in egg and chocolate chips until well combined and evenly distributed.
Pour some of the mixture into each muffin tin to fill the pie dough about ⅔ of the way.
Bake for 14-18 minutes, until the crusts are golden brown and the filling is bubbling.
Remove from the oven and let cool for 15 minutes in the muffin tins before removing from the pan. You can enjoy these while they’re still hot or once they’ve cooled off! Store in an airtight container to keep fresh for up to 1 week.
