Brownie Chocolate Cake

Active time: 20 minutes | Bake time: 20 minutes

I'm a big chocolate fan, so I love a good chocolate cake, but I wanted to make one that was a little less cakey and a little more fudgy, so I combined chocolate cake with delicious brownies and came up with this recipe! This cake has a deep chocolate flavor and is sure to impress everyone who tastes it! I topped this with a cream cheese icing which complimented the chocolate really well, but it would taste good with almost any icing recipe.

Ingredients:

  • 226g (1 cup / 2 sticks / 16 tbsp) unsalted butter, melted

  • 113g (½ cup + ⅛ cup) dark chocolate chips, or baking chocolate chopped finely

  • 200g (1 cup) granulated sugar

  • 120g (½ cup + 2 tbsp) brown sugar

  • 3 large eggs + 1 yolk, room temperature

  • 80g (⅔ cup) all purpose flour

  • 50g (½ cup)

  • 1 tsp salt

Directions:

  1. Preheat your oven to 350°F. Line a 9x13 pan with parchment paper.

  2. Place the butter and chocolate in a medium microwave-safe bowl; microwave in 30 second intervals until smooth, mixing in between each interval. Once smooth, set aside to cool for at least 10 minutes.

  3. In a large bowl, whisk eggs, brown sugar, and granulated sugar for about 3 minutes, until well incorporated and mixture has lightened in color.

  4. Pour in slightly cooled butter and chocolate mixture, whisk until combined.

  5. Add flour, cocoa powder, and salt, fold in dry ingredients until just combined.

  6. Pour batter into prepared 9x13 pan and bake for 17-25 minutes, until a toothpick comes out clean, or with a few crumbs. The cake may be shiny on top, so it may not look baked, when it actually is.

  7. Cool in the pan until cake is completely cooled. Once cool, carefully lift opposite corners of the parchment paper to transfer the cake to a cooling rack to ice.
