Browned Butter Cinnamon Cookies
Active time: 25 minutes | Bake time: 14 minutes | Yield: 12 cookies
I’m always looking for interesting ways to spruce up cookies because cookies are my favorite things to bake and experiment with! I was baking these in the fall and I felt like the browned butter and cinnamon paired beautifully together to create the perfect warm and cozy fall vibes. YUM!
Ingredients:
113g (1 stick / ½ cup) unsalted butter
100g (½ cup) brown sugar
36g (3 tbsp) powdered sugar
25g (2 tbsp) granulated sugar
1 ½ tsp vanilla bean paste, or vanilla extract
1 large egg, room temperature
150g (1 cup + 2 tbsp) all purpose flour
¾ tsp salt
¼ tsp baking soda
½ tsp baking powder
¼ tsp cinnamon
180g (1 cup) semisweet chocolate chips
Directions:
Preheat oven to 350°F. Line 2 baking sheets with parchment paper.
Place butter in a small pan over medium-high heat. Stir frequently until the butter is darker in color, has a nutty aroma, and brown flecks (5-9 minutes).
Pour the browned butter into a large heat-proof bowl. While the butter is still hot, add all three sugars and whisk until smooth. Let the butter mixture cool for around 10 minutes.
Mix in egg and vanilla.
Add flour, baking soda, baking powder, salt, and cinnamon. Fold in dry ingredients until mostly combined, still some flour visible.
Fold in chocolate chips until just evenly distributed, do not overmix
Divide dough into 45g portions (2 tbsp). Space out about 3 inches apart on the prepared baking sheets.
Bake for 12-16 minutes, until lightly browned around the edges and still very light in color in the center. Cool on the baking sheet for 10 minutes before transferring to a cooling rack.
